Eau-de-Vie de Marc de Bourgogne (often called simply Marc de Bourgogne) is one of 30 appellations for French Eaux-de-Vie. It specifically covers spirits produced within the Burgundy wine region.
Marc is grape pomace: the residual skins and seeds left behind after pressing. Under the Eau-de-Vie de Marc de Bourgogne appellation, only this dry residue may be fermented. Grape juice should not be present.
When complete grape must is fermented into an eau-de-vie, it falls under the distinct Eau-de-Vie de Vin de Bourgogne appellation. Neither of these appellations specifies which grape varieties may be used as the base. Any variety permitted under a Burgundy appellation law is allowed.
ecause only dry skins and pips are used to make Marc de Bourgogne, the resulting spirit has less of a fruity character and is much more reliant on mouthfeel than on flavors. Italian grappa is made in a very similar way.
